For a broader trip, northern Spain adds San Sebastian, Bilbao, and Santiago de Compostela for a different landscape and a strong food scene.
If food is the priority, look at the Basque Country or Rioja; for a more active pace, some Andalusia trips build around a hike on the Caminito del Rey.

 

Food varies by region too: tapas in Andalusia, pintxos in San Sebastian, and rice dishes around Valencia.
Spring and fall are usually the easiest seasons for sightseeing, while summer is lively for the coast and islands, including Ibiza, though inland areas can get very hot.
May, June, September, and October are often the most balanced months for a group trip.
